Ingredients
  

  • 1 large watermelon (scooped into 1-inch balls)
  • 1 1/4 cups pineapple (cored and cut into 1/2-inch chunks)
  • 7 oz blackberries
  • 1 pint blueberries
  • 1 medium honeydew melon (scooped into balls)
  • 5 clementines (peeled and separated into segments)
  • 2 tablespoons fresh lime juice
  • 2 tablespoons chopped fresh mint

Instructions
 

  • Start by preparing all your fruits so everything is ready to assemble. Cut the pineapple in half lengthwise, remove the core, and cut into ½-inch chunks. Peel the clementines and separate them into individual segments. Scoop the honeydew melon into 1-inch balls using a melon baller. Set all prepared fruits aside in separate bowls. I like to prep the softer fruits like clementines and berries last so they stay fresh and don't get crushed.
  • Cut a thin slice from the bottom of the watermelon so it sits flat and stable on your plate. Using a marker or knife, lightly draw a spooky jack-o'-lantern face on the watermelon. Carefully cut out the facial features (eyes, nose, mouth) with a sharp knife, being careful not to cut all the way through the rind. Once the face is carved, scoop out the watermelon flesh through the mouth opening using a melon baller or large spoon, creating 1-inch balls. Leave the flesh behind the eye and nose areas intact for the carved effect.
  • In a large bowl, combine the watermelon balls from Step 2 with the pineapple chunks, honeydew balls, clementine segments, and blueberries from Step 1. Drizzle the fresh lime juice over the fruit mixture and gently toss to combine, being careful not to crush the delicate berries. Sprinkle the fresh mint over the top and give it one more gentle toss. I find that tossing gently with a rubber spatula rather than a spoon keeps the fruit from breaking apart.
  • Place the carved watermelon jack-o'-lantern on a large serving plate. Carefully spoon the dressed fruit salad mixture from Step 3 into the watermelon's mouth opening and arrange the remaining fruit around the watermelon on the plate. Scatter the blackberries around the base of the watermelon and throughout the plate to create a festive Halloween look. The blackberries add a spooky touch and pop against the bright colors of the other fruits.
