  • Preheat your oven to 350°F and spray a 9x13 inch casserole dish with cooking spray to prevent sticking. This ensures the oven will be at the proper temperature when you're ready to bake, and having the dish prepped ahead keeps your workflow smooth.
  • In a large mixing bowl, combine the softened cream cheese, onion soup mix, and room temperature milk. Whisk or beat these together until completely smooth with no lumps—the room temperature milk helps the cream cheese blend more easily without curdling. I find using a whisk works better than a spoon here, as it breaks up any cream cheese clumps quickly and efficiently. This creates your sauce base that will coat and flavor all the green beans.
  • Add the well-drained green beans to the creamy soup mixture and stir gently until every bean is coated with sauce. Make sure to drain the green beans thoroughly before adding them—excess liquid will make the casserole watery and dilute the soup flavor. Fold in about 1 cup of the French fried onions (reserving the remaining cup for the topping), which will give you texture throughout the dish, not just on top.
  • Pour the green bean and sauce mixture into your prepared casserole dish and spread it evenly. Cover the dish tightly with aluminum foil to trap steam and cook the casserole gently for 30 minutes. This covered cooking ensures the green beans warm through completely and the sauce heats evenly without the onions browning too quickly.
  • Carefully remove the foil from the hot casserole dish and stir the mixture gently to redistribute the heat. Sprinkle the reserved French fried onions evenly over the top and return the uncovered dish to the oven for 5 more minutes. I always add the onions at the very end because they stay crispier this way—if they bake with the casserole the whole time, they get soft and lose that satisfying crunch that makes this dish special.
