Ingredients
  

For the dressing::

  • 3/4 cup sugar
  • 1 cup cider vinegar (I prefer Bragg organic for the best tang)
  • 1/3 cup oil (I use Wesson vegetable oil for a neutral flavor)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp Dijon mustard

For the salad::

  • 15 oz peas (I use Le Sueur very young small sweet peas)
  • 11 oz corn
  • 4 oz pimientos
  • 1 cup bell pepper
  • 1 cup onion
  • 1/3 cup celery
  • 1/3 cup fresh dill

Instructions
 

  • While you'll be making the dressing, start by prepping all your vegetables so they're ready to combine. Dice the bell pepper into small, uniform pieces, thinly slice the onion, and chop the celery into small pieces. Drain the canned peas and corn thoroughly—I like to rinse them quickly under cold water to remove any starchy liquid, which helps the salad stay bright and crisp. Drain and roughly chop the pimientos. Keep all vegetables in separate bowls until ready to combine.
  • In a medium saucepan, combine the sugar, cider vinegar, and oil over medium heat. Stir occasionally and let it simmer for about 6 minutes, until the sugar is completely dissolved and the mixture is clear. You should notice the flavors melding together as it heats—this warming process helps the vinegar's tanginess integrate with the oil and sweetness. Once the sugar is fully dissolved, remove from heat and transfer to a bowl to cool for about 15 minutes until it reaches room temperature.
  • In a large mixing bowl, combine the prepared vegetables from Step 1 with the salt, pepper, and Dijon mustard. Pour the cooled vinegar dressing from Step 2 over the vegetable mixture and stir everything together until well combined, making sure the dressing coats all the vegetables evenly. The mustard will help emulsify the dressing and add subtle depth to the flavor.
  • Refrigerate the salad for at least 1 hour before serving—this resting time allows the flavors to meld and deepens the taste. I find that letting it sit overnight actually improves this salad even more, as the vegetables absorb the vinegar flavor beautifully. Just before serving, stir in the fresh dill (or use parsley if you prefer) and taste for seasoning, adjusting salt and vinegar to your preference.
