- 1/2 cup pepper jack cheese
Add the cottage cheese, taco seasoning, and garlic powder to a blender. Blend on medium speed for 1-2 minutes until the mixture is completely smooth with no lumps. This creates a creamy base that will melt evenly when heated. I find that Good Culture brand cottage cheese works best here because it has less liquid than other brands, giving you a thicker, more dip-like consistency.
Transfer the blended cottage cheese mixture from Step 1 into a microwave-safe bowl and stir in the pepper jack cheese until evenly distributed. Microwave on high in 30-second intervals, stirring between each interval, for a total of 60-90 seconds until the cheese is fully melted and the dip is warm and creamy throughout. Start checking at 60 seconds—every microwave is different, and you want the dip hot but not bubbling over. I prefer to stop at 90 seconds maximum to keep the texture smooth rather than letting it overheat and become grainy.
Pour the warm dip into a serving bowl and serve right away with your choice of tortilla chips, vegetable crudités, or crackers. The dip will continue to set slightly as it cools, so serving it warm ensures the best creamy texture.
