Ingredients
  

For the salad

  • 1 cup orzo
  • 3 1/2 cups coleslaw mix
  • 1/2 cup slivered almonds, toasted
  • 1/3 cup dried cranberries
  • 3 scallions, diced

For the dressing

  • 1/4 cup orange juice
  • 1 1/2 tablespoons rice vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon toasted sesame oil
  • 1 1/2 tablespoons honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon freshly grated ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon red pepper flakes

Instructions
 

  • While you prepare other ingredients, heat a dry skillet over medium heat and toast the slivered almonds for about 5 minutes, stirring occasionally, until fragrant and lightly golden. Transfer to a plate to cool. Simultaneously, bring a pot of salted water to a boil and cook the orzo according to package directions until al dente. Drain the orzo in a colander and rinse with cold water to stop the cooking process and remove excess starch. Set aside to cool slightly.
  • In a small bowl, whisk together the orange juice, rice vinegar, olive oil, sesame oil, honey, and Dijon mustard. Add the ginger, salt, black pepper, garlic powder, onion powder, and red pepper flakes, whisking until all the spices are fully incorporated and the dressing is smooth and emulsified. I like to taste the dressing at this point and adjust the balance—if it needs more brightness, add a splash more orange juice; if it needs more depth, add a touch more sesame oil.
  • Add the coleslaw mix to the bowl with the dressing and toss thoroughly until every strand is coated and well combined. Let it sit for a few minutes to soften slightly—this allows the vegetables to absorb the flavors while remaining crunchy. Meanwhile, dice the scallions, keeping the white and light green parts separate from the darker green tops for better texture and fresher flavor in the final dish.
  • In a large bowl, combine the cooled orzo from Step 1, the dressed coleslaw from Step 3, toasted almonds, dried cranberries, and diced scallions. Toss gently but thoroughly to distribute all components evenly. I find that letting the salad rest for 10-15 minutes before serving allows the flavors to meld and the orzo to fully absorb the dressing's flavors. Serve cold or at room temperature.
