In a jar or container, combine the rolled oats, chia seeds, hemp hearts, and cinnamon. Stir well to distribute the cinnamon evenly throughout the mixture—this ensures the spice flavors throughout rather than settling to the bottom. I like to use freshly ground cinnamon here because it has a much brighter, more complex flavor than pre-ground, which can taste dusty after sitting overnight.
Add the almond milk, Greek yogurt, and honey to the jar with the dry ingredient mixture from Step 1. Stir thoroughly until all ingredients are well combined and there are no pockets of dry oats. The mixture should have a slightly thick, porridge-like consistency. Cover the jar tightly and refrigerate overnight, or for at least 6-8 hours. The chia seeds will absorb the liquid and create that signature pudding-like texture.
Remove the jar from the refrigerator and give the overnight oats a good stir—I find the mixture can settle and separate slightly overnight, so stirring brings everything back together and creates a smooth, even texture. Add fresh fruit, additional honey, nuts, or any other toppings you prefer. If the mixture seems too thick, stir in a splash more almond milk to reach your desired consistency. Enjoy straight from the jar or transfer to a bowl.
