  • 1 lb strawberries (hulled and quartered)
  • 4 kiwi (peeled and sliced into 1/2-inch half-moons)
  • 2 mangoes (diced into 3/4-inch cubes)
  • 1 cup pomegranate arils
  • 1 whole lime (freshly squeezed for bright acidity)
  • 1 tablespoon honey
  • 2 tablespoons fresh mint (thinly sliced)
  • 1 pinch sea salt

Instructions
 

  • Start by prepping all your fruit while it's still firm and fresh. Cut the pineapple into 1-inch chunks, hull and quarter the strawberries, peel the kiwis and slice them into 1/2-inch half-moons, and dice the mangoes into 3/4-inch cubes. If using fresh pomegranate, carefully extract the arils. I find that preparing fruit ahead of time gives you a moment to ensure everything is cut uniformly, which makes the salad look more intentional and professional when served to guests.
  • Squeeze the lime juice into a small bowl and whisk together with the honey and a pinch of sea salt until the honey dissolves completely. This combination of acid, sweetness, and salt will brighten all the fruit flavors. Pour the dressing over the prepared fruit from Step 1 and gently fold everything together, being careful not to crush the delicate berries and kiwi. I like to use a large rubber spatula and fold from the bottom up rather than stirring, which keeps the fruit intact and looking beautiful.
  • Transfer the fruit salad to a serving bowl and refrigerate for at least 1 hour to allow the flavors to meld and the salad to become refreshingly cold. Just before serving, taste and adjust the lime juice or honey if needed—remember that chilling can mute flavors slightly, so you may want to add a touch more lime for brightness. Toss in the fresh mint right before serving so it stays vibrant and aromatic, and give everything one final gentle fold to distribute the mint evenly throughout.
